Pupus

Pupu - (noun), Polynesian-Hawaiian Cookery: any hot or cold usually bite-size appetizer, often served in a varied assortment.
A pupu platter is a tray of Hawaiian style hors d‘oeuvres. This style of presenting meal starters became popular in the 1940’s fusing Cantonese and Hawaiian cooking. A pupu platter contains an assortment of items which may include poke (cubed seasoned fish), spareribs, wontons, chicken, egg rolls and tempura vegetables. These platters are often intended to be shared by many.
Hawaiian Avocado Jelly
Hawaiian Salmon Rolls
Ingredients:
Raw salmon, cut into strips approx 1/2 inch by 3 inches
Carrots thinly sliced
Green onions thinly sliced
Water Chestnuts diced
Peanuts crushed
Lumpia or egg roll wrappers
Canola oil for frying
   
Instructions:
Lay out egg roll wrapper with 1 pointed edge toward you. Arrange carrots, water chestnuts and one piece of salmon in the center of the wrap. Sprinkle with peanuts and green onions. Roll to ensure that all ingredients are enclosed, seal edges with water. Wrap each roll with a damp paper towel to keep wrapper moist while preparing. Heat oil on high and fry until golden brown. Serve with sauce of your choosing. (Suggestion: sesame, ginger and Dijon)
